Fudgy Brownie Cookies Recipe
Ingredients:
- 1/2 cup unsalted butter
- 1 cup semi-sweet chocolate chips
- 3/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- Extra chocolate chips for filling and topping
Instructions:
- Melt Chocolate and Butter:
- In a medium saucepan, melt the butter and 1 cup of chocolate chips over low heat, stirring frequently until smooth. Remove from heat and let cool slightly.
- Mix Wet Ingredients:
- In a large bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
- Stir the melted chocolate mixture into the sugar and egg mixture until well combined.
- Combine Dry Ingredients:
- In another bowl, sift together the flour, cocoa powder, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Prepare Cookie Dough:
- If the dough is very soft, let it chill in the refrigerator for about 30 minutes to make it easier to handle.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Form Cookies:
- Using a cookie scoop or spoon, drop dough onto the prepared baking sheet. Press a few extra chocolate chips into the top of each dough ball for a gooey center and aesthetic appeal.
- Space the cookies about 2 inches apart as they will spread.
- Bake:
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- The cookies should have a shiny, crackly surface similar to brownies.
- Cool:
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
