Ingredients:

  • 4 bone-in pork chops
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon mustard (Dijon or whole grain)
  • 1 teaspoon dried herbs (such as thyme or Italian seasoning)
  • 1/2 cup grated Parmesan cheese
  • Chopped parsley, for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Season and Sear the Pork Chops:
    • Season the pork chops generously with salt and black pepper.
    • Heat olive oil and butter in a large skillet over medium-high heat.
    • Add the pork chops and sear until golden brown on both sides, about 3-4 minutes per side. Remove the pork chops and set aside.
  3. Make the Sauce:
    • In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
    • Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom of the skillet.
    • Stir in the heavy cream, mustard, and dried herbs. Bring to a simmer.
    • Cook the sauce until it begins to thicken, about 3-5 minutes. Stir in the grated Parmesan cheese until melted and smooth.
  4. Bake:
    • Transfer the seared pork chops back to the skillet with the sauce. Spoon some of the sauce over the chops.
    • Alternatively, if your skillet is not oven-safe, transfer the pork chops and sauce into a baking dish.
    • Place in the preheated oven and bake for about 20-25 minutes, or until the pork chops are cooked through and the sauce is bubbly.
  5. Serve:
    • Garnish with chopped parsley before serving.
    • Serve hot, ideally with a side of mashed potatoes, rice, or steamed vegetables to soak up the delicious creamy sauce.
