Ingredients:

  • 500g sugar
  • 125g honey
  • 125g water
  • 2 egg whites
  • 100g almonds (toasted)
  • 100g hazelnuts (toasted)
  • 100g dried apricots (chopped)
  • 100g dried cranberries
  • 100g dried figs (chopped)
  • 100g dried pineapple (chopped)
  • 50g pistachios (optional for color)
  • Edible wafer paper (optional, for lining)

Instructions:

  1. Prepare the Nuts and Fruits:
    • Toast the almonds and hazelnuts in a dry pan or oven until golden and fragrant.
    • Roughly chop the dried fruits and set them aside with the nuts.
  2. Make the Syrup:
    • In a saucepan, combine the sugar, honey, and water.
    • Heat over medium heat until the mixture reaches 140°C (284°F) on a candy thermometer.
  3. Beat Egg Whites:
    • While the syrup is heating, beat the egg whites until they form stiff peaks.
    • Once the syrup reaches the correct temperature, slowly pour it into the egg whites, beating continuously at high speed. Continue beating until the mixture becomes thick and glossy.
  4. Mix in the Nuts and Fruits:
    • Gently fold in the toasted nuts and dried fruits until evenly distributed.
  5. Shape the Nougat:
    • Line a loaf pan or mold with edible wafer paper or parchment paper.
    • Pour the nougat mixture into the mold, pressing it down evenly.
  6. Let it Set:
    • Let the nougat sit at room temperature for a few hours or overnight to set.
  7. Serve:
    • Once set, remove the nougat from the mold and slice it into pieces with a sharp knife.
    • Store in an airtight container at room temperature.
