Fruit and Nut Nougat Recipe
Ingredients:
- 500g sugar
- 125g honey
- 125g water
- 2 egg whites
- 100g almonds (toasted)
- 100g hazelnuts (toasted)
- 100g dried apricots (chopped)
- 100g dried cranberries
- 100g dried figs (chopped)
- 100g dried pineapple (chopped)
- 50g pistachios (optional for color)
- Edible wafer paper (optional, for lining)
Instructions:
- Prepare the Nuts and Fruits:
- Toast the almonds and hazelnuts in a dry pan or oven until golden and fragrant.
- Roughly chop the dried fruits and set them aside with the nuts.
- Make the Syrup:
- In a saucepan, combine the sugar, honey, and water.
- Heat over medium heat until the mixture reaches 140°C (284°F) on a candy thermometer.
- Beat Egg Whites:
- While the syrup is heating, beat the egg whites until they form stiff peaks.
- Once the syrup reaches the correct temperature, slowly pour it into the egg whites, beating continuously at high speed. Continue beating until the mixture becomes thick and glossy.
- Mix in the Nuts and Fruits:
- Gently fold in the toasted nuts and dried fruits until evenly distributed.
- Shape the Nougat:
- Line a loaf pan or mold with edible wafer paper or parchment paper.
- Pour the nougat mixture into the mold, pressing it down evenly.
- Let it Set:
- Let the nougat sit at room temperature for a few hours or overnight to set.
- Serve:
- Once set, remove the nougat from the mold and slice it into pieces with a sharp knife.
- Store in an airtight container at room temperature.
