Fluffy White Velvet Cake with Vanilla Buttercream

Ingredients:

For the Cake:

• 3 cups all-purpose flour

• 1/4 cup cornstarch

• 2 teaspoons baking powder

• 1/2 teaspoon salt

• 1 cup unsalted butter, softened

• 2 cups granulated sugar

• 4 large eggs

• 1 teaspoon vanilla extract

• 1 1/2 cups buttermilk (or milk with a splash of lemon juice)

For the Vanilla Buttercream:

• 1 cup unsalted butter, softened

• 4 cups powdered sugar

• 2 teaspoons vanilla extract

• 2-3 tablespoons milk

Instructions:

To Make the Cake:

1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a bowl, sift together flour, cornstarch, baking powder, and salt.

3. In a large mixing bowl, cream butter and sugar until light and fluffy.

4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.

5. Gradually add the dry ingredients and buttermilk alternately, starting and ending with the dry ingredients. Mix until just combined.

6. Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.

7. Allow cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

To Make the Buttercream:

1. Beat butter in a large bowl until smooth and creamy.

2. Gradually add powdered sugar, mixing well after each addition.

3. Add vanilla extract and milk, one tablespoon at a time, until the frosting reaches your desired consistency.

To Assemble:

1. Place one cake layer on a serving plate and spread a layer of buttercream on top.

2. Add the second cake layer and frost the top and sides evenly.

3. Decorate as desired.
