Roasted Cauliflower and Mushroom Medley.

Ingredients:

  • 1 head of cauliflower, cut into florets
  • 8 oz (225 grams) mushrooms, sliced (any variety that you prefer)
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: red pepper flakes for a bit of spice

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
  2. Prepare the Vegetables:
    • In a large bowl, toss the cauliflower florets and sliced mushrooms with olive oil, minced garlic, salt, and pepper until everything is evenly coated.
  3. Roasting:
    • Spread the vegetables out in a single layer on a baking sheet. Make sure they’re not overcrowded to ensure they roast nicely.
    • Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and the edges are golden brown. Stir halfway through the cooking time to ensure even roasting.
  4. Garnishing:
    • Once done, transfer the vegetables to a serving dish and sprinkle with chopped fresh parsley and optional red pepper flakes.
