Ingredients:

  • For the crepes:
    • 1 cup all-purpose flour
    • 2 eggs
    • 1/2 cup milk
    • 1/2 cup water
    • 1/4 teaspoon salt
    • 2 tablespoons melted butter
    • 1 teaspoon sugar (optional, for a slightly sweetened crepe)
  • For the cream filling:
    • 1 cup heavy cream
    • 2 tablespoons powdered sugar
    • 1 teaspoon vanilla extract
  • For garnish:
    • Powdered sugar
    • Lemon zest or a drizzle of lemon syrup (optional)

Instructions:

  1. Make the crepe batter:
    • In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine.
    • Add the salt and melted butter, and beat the mixture until smooth. For a slightly sweet crepe, add the sugar to the batter.
  2. Cook the crepes:
    • Heat a lightly oiled frying pan over medium-high heat.
    • Pour or scoop the batter onto the pan, using approximately 1/4 cup for each crepe.
    • Tilt the pan in a circular motion so that the batter coats the surface evenly.
    • Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
  3. Prepare the cream filling:
    • In a medium bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  4. Assemble the crepes:
    • Spoon or pipe the cream filling down the center of each crepe.
    • Roll the crepes up and place seam-side down on a serving dish.
  5. Serve:
    • Dust with powdered sugar and add lemon zest or a drizzle of lemon syrup for extra flavor.
    • Serve immediately while fresh and creamy!
