Ingredients:
- For the crepes:

- 2 eggs

Instructions:
- Make the crepe batter:

- Cook the crepes:
- Heat a lightly oiled frying pan over medium-high heat.

- In a medium bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Assemble the crepes:
- Spoon or pipe the cream filling down the center of each crepe.
- Roll the crepes up and place seam-side down on a serving dish.
- Serve:
- Dust with powdered sugar and add lemon zest or a drizzle of lemon syrup for extra flavor.
