Ingredients:

  • 8 slices white bread
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon nutmeg
  • Salt and pepper, to taste
  • 1 cup grated Gruyère cheese
  • 4 slices cooked ham
  • Extra Gruyère for topping
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Béchamel Sauce:
    • In a small saucepan, melt 2 tablespoons of butter over medium heat.
    • Whisk in the flour and cook for about 1 minute until it forms a paste but does not brown.
    • Gradually whisk in the milk until the mixture is smooth.
    • Cook, stirring continuously, until the sauce thickens and comes to a gentle boil.
    • Remove from heat and stir in the mustard, nutmeg, and a pinch of salt and pepper.
    • Add 1/2 cup of grated Gruyère cheese and stir until melted and smooth. Set aside.
  3. Assemble the Sandwiches:
    • Butter each slice of bread on one side.
    • For each sandwich, place a slice of bread, buttered side down, and spread some béchamel sauce over it.
    • Add a slice of ham and a sprinkle of Gruyère.
    • Top with another slice of bread, buttered side up.
  4. Cook on Stovetop:
    • Heat a skillet over medium heat.
    • Cook the sandwiches for about 3 minutes on each side, until they are golden brown and the cheese starts to melt.
  5. Bake:
    • Transfer the sandwiches to a baking sheet.
    • Top each sandwich with a spoonful of béchamel sauce and a sprinkle of Gruyère and Parmesan cheeses.
    • Bake in the oven for about 5 minutes, then broil for 2-3 minutes until the cheese is bubbly and lightly browned.
  6. Serve:
    • Serve hot with a side of mixed greens or your choice of side.
