Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup potatoes, peeled and diced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1/2 cup celery, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk for a vegan option
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Fresh parsley, chopped (for garnish)

  1. Sauté the Vegetables:
    • Heat olive oil in a large pot over medium heat.
    • Add the onion and garlic, sauté until onions are translucent.
    • Add carrots, potatoes, and celery. Cook for about 5 minutes, stirring occasionally.
  2. Simmer the Soup:
    • Pour in the vegetable broth and bring to a boil.
    • Reduce heat to low and simmer for 10 minutes.
    • Add broccoli and cauliflower. Continue to simmer until all vegetables are tender, about 10 more minutes.
  3. Blend for Creaminess:
    • Take half of the soup and blend it until smooth (using a blender or immersion blender). Return the blended soup to the pot.
    • Stir in the heavy cream or coconut milk. Heat through.
  4. Season:
    • Add thyme, paprika, salt, and pepper. Adjust seasoning to your taste.
  5. Serve:
    • Ladle the soup into bowls.
    • Garnish with fresh parsley and serve warm.

This soup is comforting and perfect for any season but particularly good as a warm meal on chilly days. Enjoy the rich flavors of the vegetables combined with the creamy texture.
