Creamy Vegetable Soup Recipe
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup potatoes, peeled and diced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1/2 cup celery, diced
- 4 cups vegetable broth
- 1 cup heavy cream or coconut milk for a vegan option
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Fresh parsley, chopped (for garnish)

- Sauté the Vegetables:
- Heat olive oil in a large pot over medium heat.
- Add the onion and garlic, sauté until onions are translucent.
- Add carrots, potatoes, and celery. Cook for about 5 minutes, stirring occasionally.
- Simmer the Soup:
- Pour in the vegetable broth and bring to a boil.
- Reduce heat to low and simmer for 10 minutes.
- Add broccoli and cauliflower. Continue to simmer until all vegetables are tender, about 10 more minutes.
- Blend for Creaminess:
- Take half of the soup and blend it until smooth (using a blender or immersion blender). Return the blended soup to the pot.
- Stir in the heavy cream or coconut milk. Heat through.
- Season:
- Add thyme, paprika, salt, and pepper. Adjust seasoning to your taste.
- Serve:
- Ladle the soup into bowls.
- Garnish with fresh parsley and serve warm.
