Ingredients:

  • 12 oz (340g) spaghetti or fettuccine
  • 2 tablespoons olive oil
  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1/4 teaspoon nutmeg (optional, for extra depth)
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken:
    • In a large skillet, heat the olive oil over medium heat.
    • Season the chicken pieces with salt and pepper, then add them to the skillet.
    • Cook until the chicken is golden brown and fully cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Prepare the Alfredo Sauce:
    • In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
    • Pour in the heavy cream and chicken broth, stirring to combine.
    • Bring the mixture to a gentle simmer, then add the Parmesan cheese and nutmeg (if using). Stir until the cheese is fully melted and the sauce is smooth and creamy.
  4. Combine Everything:
    • Return the cooked chicken to the skillet, then add the cooked pasta. Toss everything together to coat the pasta and chicken in the sauce.
    • Cook for an additional 1-2 minutes to let the flavors meld together.
  5. Serve:
    • Garnish with chopped fresh parsley and a sprinkle of black pepper. Serve hot and enjoy!
