Preparation Time: 15 minutes
Cooking Time: 25 minutes
Ingredients:
- 12 oz (340g) spaghetti or fettuccine
- 2 tablespoons olive oil
- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and black pepper, to taste
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1/4 teaspoon nutmeg (optional, for extra depth)
- Fresh parsley, chopped, for garnish
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
- Cook the Chicken:
- In a large skillet, heat the olive oil over medium heat.
- Season the chicken pieces with salt and pepper, then add them to the skillet.
- Cook until the chicken is golden brown and fully cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Prepare the Alfredo Sauce:
- In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
- Pour in the heavy cream and chicken broth, stirring to combine.
- Bring the mixture to a gentle simmer, then add the Parmesan cheese and nutmeg (if using). Stir until the cheese is fully melted and the sauce is smooth and creamy.
- Combine Everything:
- Return the cooked chicken to the skillet, then add the cooked pasta. Toss everything together to coat the pasta and chicken in the sauce.
- Cook for an additional 1-2 minutes to let the flavors meld together.
- Serve:
- Garnish with chopped fresh parsley and a sprinkle of black pepper. Serve hot and enjoy!
