Creamy Chicken Alfredo Pasta

Ingredients:

For the Chicken:

  • 2 chicken breasts, cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil

For the Alfredo Sauce:

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 1/2 teaspoon Italian seasoning (optional)
  • Fresh parsley or basil, chopped (for garnish)

For the Pasta:

  • 8 oz (225g) penne or pasta of choice
  • Salt, for pasta water

Instructions:

  1. Cook the Pasta:
    • Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken:
    • Season the chicken pieces with salt, black pepper, garlic powder, and paprika.
    • In a large skillet, heat olive oil over medium heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Make the Alfredo Sauce:
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
    • Pour in the heavy cream and bring it to a gentle simmer. Stir in the Parmesan cheese and continue to cook, stirring constantly, until the sauce thickens.
    • Season with salt, black pepper, and Italian seasoning (if using) to taste.
  4. Combine and Serve:
    • Add the cooked pasta to the skillet and toss to coat in the Alfredo sauce.
    • Add the cooked chicken on top and gently toss everything together.
    • Garnish with chopped fresh parsley or basil.
  5. Serve:
    • Serve the creamy chicken Alfredo pasta warm and enjoy!
