- 1 large head of broccoli, chopped (including stems)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons butter or olive oil
- 4 cups (1L) vegetable or chicken broth
- 1 cup (240ml) heavy cream, milk, or coconut milk for a dairy-free option
- 1 medium potato, peeled and diced (optional, for extra creaminess)
- Salt and pepper to taste

Instructions:
- Sauté the Vegetables:
- In a large pot, heat the butter or olive oil over medium heat.
- Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute, being careful not to let it burn.
- Cook the Broccoli and Potato:
- Add the chopped broccoli and diced potato to the pot. Stir to combine with the onions and garlic.
- Pour in the vegetable or chicken broth, and bring the mixture to a boil.
- Reduce the heat to a simmer, cover the pot, and cook for about 15-20 minutes, or until the broccoli and potato are tender.
- Blend the Soup:
- Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and puree until smooth. Be cautious with the hot liquid.
- If the soup is too thick, you can add more broth or water to reach your desired consistency.
- Add the Cream:
- Stir in the heavy cream or your chosen milk alternative. Heat the soup gently, but do not let it boil.
- Season with salt, pepper, and a pinch of nutmeg if using.
- Serve and Garnish:
- Ladle the soup into bowls and garnish with freshly grated Parmesan cheese, croutons, and fresh herbs if desired.
