Chocolate Swiss Roll with Cream Filling

 

 

Ingredients:

**For the Sponge Cake:**
– 4 large eggs
– 3/4 cup granulated sugar
– 1 tsp vanilla extract
– 1/4 cup cocoa powder
– 3/4 cup all-purpose flour
– 1 tsp baking powder
– 1/4 tsp salt

**For the Cream Filling:**
– 1 cup heavy whipping cream
– 1/2 cup powdered sugar
– 1 tsp vanilla extract

**For the Chocolate Coating:**
– 1 cup semi-sweet chocolate chips
– 1/2 cup heavy cream
– Chocolate sprinkles, for decoration

Instructions:

 

1. **Prepare the Sponge Cake:**
– Preheat your oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper and lightly grease it.
– In a large bowl, beat the eggs and sugar together until thick and pale, about 5 minutes.
– Add the vanilla extract and mix until combined.
– Sift together the cocoa powder, flour, baking powder, and salt.
– Gently fold the dry ingredients into the egg mixture until well combined.
– Pour the batter into the prepared pan and spread it evenly.
– Bake for 10-12 minutes, or until the cake springs back when lightly touched.
– Remove from the oven and let it cool for a few minutes, then turn the cake out onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper and roll the cake up in the towel from the short end. Let it cool completely.

2. **Prepare the Cream Filling:**
– In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
– Unroll the cooled cake and spread the cream filling evenly over the surface.
– Roll the cake back up tightly, starting from the short end. Place the roll seam side down on a serving platter.

3. **Prepare the Chocolate Coating:**
– In a microwave-safe bowl, heat the chocolate chips and heavy cream together in 30-second intervals, stirring between each, until smooth and fully melted.
– Let the mixture cool slightly before pouring it over the rolled cake, spreading it evenly.
– Sprinkle chocolate sprinkles over the top for decoration.
– Refrigerate the cake for at least 1 hour to set the chocolate coating.

4. **Serve:**
– Slice and serve the chocolate Swiss roll chilled.
