Peanut Butter Oat Bars

Ingredients:
– 1 cup creamy peanut butter
– 1/2 cup honey
– 1/2 cup coconut oil
– 3 cups rolled oats
– 1 teaspoon vanilla extract
– A pinch of salt
– Optional: 1/2 cup chopped nuts or chocolate chips
Instructions:
1. **Prepare the Pan**: Line an 8×8 inch square baking pan with parchment paper, leaving some overhang for easy removal.
2. **Melt the Mixture**: In a medium saucepan over low heat, combine the peanut butter, honey, and coconut oil. Stir continuously until the mixture is completely melted and smooth.
3. **Mix the Oats**: Remove the saucepan from heat and stir in the vanilla extract and salt. Gradually add the rolled oats, stirring until well combined. If you’re adding nuts or chocolate chips, fold them in now.
4. **Press into Pan**: Pour the mixture into the prepared baking pan. Use a spatula or the back of a spoon to press the mixture firmly and evenly into the pan.

5. **Chill**: Place the pan in the refrigerator for at least 2 hours or until the bars are firm and set.
6. **Cut and Serve**: Once firm, lift the bars out of the pan using the parchment paper. Cut into bars or squares. Serve immediately or store in an airtight container in the refrigerator.
