  • 1 cup chicken broth

  • 1 tablespoon brown sugar
  • 1 red bell pepper, sliced
  • 1/2 cup fresh basil leaves
  • 1/2 cup bamboo shoots (optional)
  • Juice of 1 lime
  • Salt to taste

Instructions:

  1. Prepare Ingredients:
    • Start by prepping your chicken and pumpkin. Ensure the pumpkin is cut into even cubes so it cooks uniformly.
  2. Cook the Chicken:
    • Heat the vegetable oil in a large skillet or wok over medium heat.

    • Continue to simmer everything together for another 10 minutes, or until the chicken is thoroughly cooked and the pumpkin is tender but not mushy.
