- 1 pound chicken breast, thinly sliced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
FOR THE LO MEIN:
- 8 ounces lo mein noodles or spaghetti
- 2 tablespoons vegetable oil, divided
- 2 cloves garlic, minced
- 1 medium carrot, julienned
- 1 bell pepper, thinly sliced
- 1/2 cup snow peas or snow peas
- 1 /2 cup mushrooms, sliced (optional)
- 2 spring onions, chopped
- Additional vegetables as desired (e.g., cabbage, broccoli)

- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon ground ginger
- 1/2 cup chicken broth or water

- In a bowl, mix chicken slices with 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sesame oil and 1 teaspoon cornstarch. Mix well and let marinate for at least 15 minutes.
- PREPARE NOODLES:
- Cook lo mein noodles according to package instructions until tender. Drain and reserve.If using spaghetti, cook it al dente.
- PREPARE SAUCE:
- In a small bowl, stir together 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sesame oil, 1 teaspoon sugar, 1/2 teaspoon ground ginger and broth. chicken or water. Put aside.

- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and sauté until cooked through and no longer pink. Remove chicken from pan and set aside.
