Cheesy Ground Beef and Onion Casserole

– 1 pound ground beef
– 1 large onion, chopped
– 2 cloves garlic, minced
– 1 can (15 ounces) diced tomatoes
– 1 can (15 ounces) tomato sauce
– 1 can (15 ounces) kidney beans, drained and rinsed
– 1 packet taco seasoning
– 2 cups shredded cheddar cheese
– 1 cup shredded Monterey Jack cheese
– 1/2 cup sliced black olives
– 2 cups cooked white rice
– 2 cups shredded lettuce
– 1 cup chopped tomatoes
– 1/2 cup sour cream (optional)
– Salt and pepper to taste
**Instructions:**
1. **Cook the Ground Beef:**
– In a large skillet, cook the ground beef over medium-high heat until browned. Drain any excess fat.
– Add the chopped onion and garlic to the skillet and cook until the onion is translucent.
2. **Prepare the Slow Cooker:**
– Transfer the cooked ground beef mixture to the slow cooker.
– Add the diced tomatoes, tomato sauce, kidney beans, and taco seasoning. Stir to combine.
3. **Slow Cook:**
– Cover the slow cooker and cook on low for 4-6 hours, or on high for 2-3 hours.

4. **Add the Cheese:**
– About 30 minutes before serving, stir in the cooked rice and 1 cup of shredded cheddar cheese.
– Sprinkle the remaining cheddar cheese and the Monterey Jack cheese on top. Cover and let the cheese melt.
5. **Serve:**
– Once the cheese is melted, top the casserole with shredded lettuce, chopped tomatoes, and sliced black olives.
– Serve with a dollop of sour cream, if desired.
