Italian Style Chopped Tomato Avocado Salad
This chopped salad will definitely be the highlight of our week… Ohhhh how I LOVE chopped salads!
There are good, clean, store-bought pesto options available at most grocery stores these days.I really like the one I found at Trader Joe’s. Of course, you can always make fresh pesto at home!

Ingredients:
2 cups cherry or grape tomatoes, halved or quartered
2 ripe avocados, diced
1 large English cucumber, halved and sliced
1 medium red onion, diced

8 ounces small balls of fresh mozzarella cheese
Dressing:
1/4 cup basil pesto
2 tablespoons lemon juice

sea salt and freshly ground black pepper to taste
Prepare your dressing in a small bowl, whisk together pesto sauce and freshly squeezed lemon juice. Season with sea salt and freshly ground black pepper.
Arrange all the salad ingredients in a large bowl as shown.When making a meal, squeeze some lemon juice over the avocado (to prevent it from browning) and store it in the refrigerator separately from the dressing.

Shortly before serving, pour the dressing over the salad and mix all the ingredients carefully.
It’s best to consume it straight away, but it will keep in the fridge for around 48 hours thanks to the fresh lemon juice!
