Cheesy Broccoli and Cauliflower Casserole with Sausage

 

 

 

Ingredients:

 

– 1 head broccoli, cut into florets
– 1 head cauliflower, cut into florets
– 1 cup sliced sausage or pepperoni
– 2 cups shredded mozzarella cheese
– 1 cup shredded cheddar cheese
– 1/2 cup grated Parmesan cheese
– 1 cup heavy cream
– 2 cloves garlic, minced
– 1 tsp dried Italian herbs
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)

Instructions:

 

1. **Preheat Oven**:
– Preheat your oven to 375°F (190°C).

2. **Prepare the Vegetables**:
– In a large pot of boiling salted water, blanch the broccoli and cauliflower florets for 3-4 minutes until just tender. Drain and set aside.

3. **Prepare the Sausage**:
– If using sausage, slice it and cook in a skillet over medium heat until browned. If using pepperoni, you can use it as is.

4. **Make the Cheese Sauce**:
– In a saucepan over medium heat, add the heavy cream and minced garlic. Heat until it begins to simmer.
– Stir in the Italian herbs, salt, and pepper.
– Gradually add the shredded mozzarella, cheddar, and Parmesan cheese, stirring constantly until the cheese is melted and the sauce is smooth.

5. **Assemble the Casserole**:
– In a large mixing bowl, combine the blanched broccoli and cauliflower with the sausage or pepperoni.
– Pour the cheese sauce over the vegetables and sausage, and stir to combine.
– Transfer the mixture to a greased 9×13 inch baking dish.
– Sprinkle additional mozzarella or cheddar cheese on top if desired.

6. **Bake**:
– Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.

7. **Serve**:
– Garnish with freshly chopped parsley before serving.
