Ingredients:

  • 12 oz (340 g) pasta (such as rigatoni or penne)
  • 2 cups cherry tomatoes, halved
  • 1 cup feta cheese, cubed or crumbled
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 garlic clove, minced
  • Salt and black pepper, to taste
  • Optional: red pepper flakes for a bit of heat

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the pasta according to package instructions until al dente.
    • Drain and rinse under cold water to cool.
  2. Make the Dressing:
    • In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and black pepper until well combined.
  3. Assemble the Salad:
    • In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, and cubed feta cheese.
    • Pour the dressing over the pasta mixture and toss to coat evenly.
    • Add the chopped basil and toss again gently.
  4. Season:
    • Taste and adjust the seasoning with additional salt and pepper if needed.
    • If you like a bit of a kick, sprinkle some red pepper flakes over the top.
  5. Chill:
    • Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
  6. Serve:
    • Serve the pasta salad chilled or at room temperature.
    • Garnish with extra basil leaves just before serving for added freshness.
