Recipe for Tomato Basil Feta Pasta Salad
Ingredients:
- 12 oz (340 g) pasta (such as rigatoni or penne)
- 2 cups cherry tomatoes, halved
- 1 cup feta cheese, cubed or crumbled
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 garlic clove, minced
- Salt and black pepper, to taste
- Optional: red pepper flakes for a bit of heat
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook the pasta according to package instructions until al dente.
- Drain and rinse under cold water to cool.
- Make the Dressing:
- In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and black pepper until well combined.
- Assemble the Salad:
- In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, and cubed feta cheese.
- Pour the dressing over the pasta mixture and toss to coat evenly.
- Add the chopped basil and toss again gently.
- Season:
- Taste and adjust the seasoning with additional salt and pepper if needed.
- If you like a bit of a kick, sprinkle some red pepper flakes over the top.
- Chill:
- Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
- Serve:

- Garnish with extra basil leaves just before serving for added freshness.
