Ingredients:

  • 1.5 lbs (680 g) baby potatoes, halved
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 6 slices of bacon, chopped
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped chives or green onions
  • 1 teaspoon garlic powder (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare Potatoes:
    • Toss the halved baby potatoes with olive oil, salt, pepper, and garlic powder if using. Spread them out on a baking sheet in a single layer.
  3. Roast Potatoes:
    • Roast the potatoes in the preheated oven for about 20-25 minutes, or until they are golden and fork-tender.
  4. Cook Bacon:
    • While the potatoes are roasting, cook the chopped bacon in a skillet over medium heat until crisp. Remove and drain on paper towels.
  5. Combine and Finish Baking:
    • Once the potatoes are roasted, sprinkle the shredded cheddar cheese over them, then add the crispy bacon on top.
    • Return the baking sheet to the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly.
