Cheesy Bacon Potato Rounds
Ingredients:
- 4 medium-sized potatoes
- 1 cup shredded cheddar cheese (or a cheese blend)
- 4 slices of bacon, cooked and crumbled
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon chopped fresh chives (optional)
- Sour cream (optional, for serving)
Instructions:
- Preheat the oven to 400°F (200°C).
- Prepare the potatoes: Wash the potatoes well and slice them into rounds about 1/4 inch thick.
- Season and bake the potatoes: Place the potato slices on a baking sheet lined with parchment paper or foil. Brush both sides with olive oil and sprinkle with salt and pepper. Bake for 20 minutes, flip the slices, and bake for another 15-20 minutes, until they are golden and crispy around the edges.
- Add cheese and bacon: Remove the potato slices from the oven, sprinkle shredded cheese and crumbled bacon on each slice. Return the tray to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.
- Garnish and serve: Once out of the oven, sprinkle with chopped chives if using, and serve with sour cream on the side.
