Ingredients:

For the Casserole:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 pound smoked sausage or kielbasa, sliced into rounds
  • 2 cups pasta (such as penne or rotini)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the Pasta:
    • Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken and Sausage:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chicken pieces, season with salt and pepper, and cook until browned and fully cooked through, about 5-7 minutes. Remove from the skillet and set aside.
    • In the same skillet, add the sliced sausage and cook until browned. Remove and set aside with the chicken.
  3. Prepare the Sauce:
    • In the same skillet, add the chopped onion and cook until soft, about 3-4 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
    • Stir in the condensed cream of chicken soup, chicken broth, sour cream, dried thyme, and paprika. Mix well and bring to a simmer.
    • Add the cooked chicken, sausage, and pasta to the sauce. Stir to combine.
  4. Assemble the Casserole:
    • Preheat your oven to 350°F (175°C).
    • Pour the chicken and sausage mixture into a greased 9×13-inch baking dish.
    • Sprinkle the shredded cheddar cheese evenly over the top.
  5. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Remove from the oven and let it cool slightly before serving.
    • Garnish with freshly chopped parsley and serve hot.

Tips:

  • You can add vegetables like broccoli, bell peppers, or mushrooms to the casserole for added flavor and nutrition.
  • For a bit of spice, add some crushed red pepper flakes to the sauce.
  • Serve this casserole with a side salad or garlic bread for a complete meal.
