Cauliflower Gratin
Ingredients:
- 1 large head of cauliflower, cut into florets
- 1 cup heavy cream
- 1/2 cup whole milk
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup grated Parmesan cheese (divided)
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika (optional, for a touch of color)
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Cauliflower:
- Bring a large pot of salted water to a boil.
- Add the cauliflower florets and cook for 5-7 minutes until slightly tender but not too soft. Drain well and set aside.
- Make the Cheese Sauce:
- In a saucepan, melt the butter over medium heat.
- Stir in the flour and cook for 1-2 minutes to create a roux (it should form a paste).
- Gradually whisk in the heavy cream and milk, stirring constantly until the sauce thickens (about 3-5 minutes).
- Add 1/2 cup of grated Parmesan, the garlic powder, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
- Assemble the Dish:
- Place the drained cauliflower florets into a baking dish.
- Pour the cheese sauce evenly over the cauliflower.
- Sprinkle the remaining 1/2 cup of grated Parmesan cheese and the shredded mozzarella cheese over the top.
- Optionally, sprinkle paprika on top for a nice golden color when baked.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown.
- Serve:
- Garnish with fresh herbs like parsley or chives if desired.
- Serve hot as a side dish or a main course.
Variations:
- Add-ins: You can add cooked bacon bits, or sprinkle breadcrumbs mixed with butter on top for a crunchy topping.
- Cheese Options: Feel free to use different cheeses such as Gruyère or cheddar for more flavor.
