Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup grated Parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional, for a touch of color)
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Cauliflower:
    • Bring a large pot of salted water to a boil.
    • Add the cauliflower florets and cook for 5-7 minutes until slightly tender but not too soft. Drain well and set aside.
  3. Make the Cheese Sauce:
    • In a saucepan, melt the butter over medium heat.
    • Stir in the flour and cook for 1-2 minutes to create a roux (it should form a paste).
    • Gradually whisk in the heavy cream and milk, stirring constantly until the sauce thickens (about 3-5 minutes).
    • Add 1/2 cup of grated Parmesan, the garlic powder, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
  4. Assemble the Dish:
    • Place the drained cauliflower florets into a baking dish.
    • Pour the cheese sauce evenly over the cauliflower.
    • Sprinkle the remaining 1/2 cup of grated Parmesan cheese and the shredded mozzarella cheese over the top.
    • Optionally, sprinkle paprika on top for a nice golden color when baked.
  5. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown.
  6. Serve:
    • Garnish with fresh herbs like parsley or chives if desired.
    • Serve hot as a side dish or a main course.

Variations:

  • Add-ins: You can add cooked bacon bits, or sprinkle breadcrumbs mixed with butter on top for a crunchy topping.
  • Cheese Options: Feel free to use different cheeses such as Gruyère or cheddar for more flavor.
