Ingredients:

  • For the Sponge Cake:
    • 4 large eggs
    • 3/4 cup granulated sugar
    • 1 teaspoon vanilla extract
    • 1 cup all-purpose flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • Pink food coloring (optional)
    • Powdered sugar, for rolling
  • For the Filling:
    • 1 cup heavy cream
    • 1/2 cup powdered sugar
    • 1/2 teaspoon vanilla extract
    • 1/2 cup finely chopped fresh strawberries
  • For the Coating:
    • Crushed pink sponge cake crumbs
    • Fresh strawberry slices for decoration

Instructions:

  1. Preheat and Prepare:
    • Preheat your oven to 375°F (190°C).
    • Line a jelly roll pan with parchment paper and lightly grease or spray with non-stick spray.
  2. Make the Sponge Cake:
    • In a large bowl, whisk the eggs and granulated sugar until thick and pale. Add vanilla extract.
    • Sift together the flour, baking powder, and salt. Gently fold into the egg mixture until combined. If desired, add a few drops of pink food coloring to achieve a pink hue.
    • Spread the batter evenly onto the prepared pan.
    • Bake for 10-12 minutes or until the cake springs back when touched.
  3. Roll the Cake:
    • Dust a clean kitchen towel with powdered sugar.
    • Immediately turn the hot cake onto the towel. Peel away the parchment paper.
    • Start at one of the short ends and gently roll the cake with the towel inside. Let it cool completely rolled up.
  4. Prepare the Filling:
    • Whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
    • Fold in the chopped strawberries.
  5. Assemble the Swiss Roll:
    • Unroll the cooled cake and spread the cream filling evenly over the cake.
    • Reroll the cake without the towel. Trim the edges for a clean look.
  6. Coat the Roll:
    • Cover the outside of the roll with the remaining cream or a thin layer of simple frosting as glue.
    • Press the crushed sponge cake crumbs onto the frosting.
    • Decorate with fresh strawberry slices.
  7. Chill and Serve:
    • Chill the roll in the refrigerator before serving to set the cream and make slicing easier.
    • Slice with a serrated knife and serve chilled.
