Grilled Beef Burritos

 

 

 

Ingredients:

**For the Beef Filling:**
– 1 pound (450g) ground beef or shredded beef
– 1 small onion, finely chopped
– 3 cloves garlic, minced
– 1 bell pepper, diced
– 1 can (14 oz) black beans, drained and rinsed
– 1 packet taco seasoning (or homemade: 1 tsp chili powder, 1/2 tsp cumin, 1/2 tsp paprika, 1/2 tsp oregano, 1/2 tsp garlic powder, 1/2 tsp onion powder, salt to taste)
– 1/2 cup tomato sauce or salsa
– Salt and pepper to taste

**For the Burritos:**
– Large flour tortillas
– 1 cup cooked rice (optional)
– 1 cup shredded cheddar cheese or a Mexican cheese blend
– 1 cup shredded lettuce
– 1 cup chopped tomatoes
– 1/2 cup sour cream
– 1/4 cup chopped fresh cilantro
– Lime wedges for serving

Instructions:

 

1. **Prepare the Beef Filling:**
– In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
– Add the chopped onion, garlic, and diced bell pepper to the beef. Cook until the vegetables are soft, about 5 minutes.
– Stir in the taco seasoning and tomato sauce or salsa. Add the black beans and stir to combine.
– Let the mixture simmer for about 5-7 minutes, until the flavors are well combined. Adjust seasoning with salt and pepper as needed.

2. **Assemble the Burritos:**
– Lay out a flour tortilla on a flat surface. If you’re adding rice, spoon a portion of the cooked rice down the center of the tortilla.
– Add a generous scoop of the beef filling on top of the rice.
– Sprinkle shredded cheese over the beef, then top with shredded lettuce, chopped tomatoes, and a dollop of sour cream.
– Sprinkle with chopped cilantro for freshness.

3. **Fold and Grill the Burritos:**
– To fold the burrito, fold the sides over the filling, then roll it up tightly from the bottom to the top.
– Heat a clean skillet or grill pan over medium heat. Place the burritos seam-side down in the pan.
– Grill the burritos for about 2-3 minutes on each side, until the tortilla is golden brown and crispy.

4. **Serve:**
– Serve the grilled burritos hot, with lime wedges on the side for squeezing over the top.
– You can also serve with extra salsa, guacamole, or hot sauce if you like it spicy.

Tips:

– You can customize these burritos with any of your favorite fillings, such as guacamole, pico de gallo, or even some sautéed onions and peppers.
