Chicken Parmesan with Creamy Macaroni and Cheese

For the Chicken Parmesan:

– **2 boneless, skinless chicken breasts**
– **1 cup all-purpose flour**
– **2 eggs**, beaten
– **1 cup breadcrumbs** (Panko works well for extra crispiness)
– **1/2 cup grated Parmesan cheese**
– **1/2 teaspoon garlic powder**
– **1/2 teaspoon onion powder**
– **1/2 teaspoon paprika**
– **Salt and pepper**, to taste
– **1/4 cup olive oil**, for frying

For the Creamy Macaroni and Cheese:

– **8 oz elbow macaroni** (or any small pasta shape)
– **2 tablespoons butter**
– **2 tablespoons all-purpose flour**
– **2 cups milk**
– **1 1/2 cups shredded cheddar cheese**
– **1/2 cup shredded mozzarella cheese**
– **Salt and pepper**, to taste
– **Optional:** 1/4 teaspoon nutmeg for added flavor

Instructions:

 

1. **Prepare the Chicken Parmesan:**
– Butterfly the chicken breasts or pound them to an even thickness.
– Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, grated Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
– Dredge each chicken breast first in the flour, then in the beaten eggs, and finally in the breadcrumb mixture, pressing the breadcrumbs onto the chicken to adhere.
– Heat the olive oil in a large skillet over medium heat. Cook the breaded chicken breasts for 4-5 minutes per side or until golden brown and fully cooked. Remove and drain on paper towels.

2. **Prepare the Creamy Macaroni and Cheese:**
– Cook the pasta according to package instructions. Drain and set aside.
– In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes to create a roux.
– Gradually whisk in the milk, bringing the mixture to a simmer. Cook until the sauce thickens.
– Remove from heat and stir in the shredded cheddar and mozzarella cheeses until melted and smooth. Season with salt, pepper, and nutmeg if using.
– Add the cooked pasta to the cheese sauce, stirring to coat the pasta evenly.
