Ingredients

 

– **For the Rolls:**
– 8 slices of bread, crusts removed
– 1 cup cream cheese, softened
– 1/2 cup shredded mozzarella or cheddar cheese
– 1/2 cup finely chopped red bell pepper
– 1/4 cup finely chopped green onions or chives
– Salt and pepper, to taste

– **For the Coating:**
– 1 cup all-purpose flour
– 2 eggs, beaten
– 1 cup breadcrumbs
– Oil, for frying

Instructions

 

1. **Prepare the Filling:**
– In a bowl, mix together the cream cheese, shredded cheese, red bell pepper, green onions, salt, and pepper until well combined.

2. **Assemble the Rolls:**
– Flatten each slice of bread with a rolling pin to make them thin and easy to roll.
– Spread about a tablespoon of the filling onto each slice of bread.
– Roll each slice tightly and press gently to seal the edges.

3. **Prepare the Coating:**
– Place the flour, beaten eggs, and breadcrumbs in separate shallow bowls.
– Dredge each roll in the flour, shaking off excess, then dip in the beaten eggs, and finally coat with breadcrumbs, pressing lightly to adhere.

4. **Fry the Rolls:**
– Heat oil in a deep skillet over medium heat.
– Fry the rolls in batches until golden brown and crispy on all sides, about 3-4 minutes per batch.
– Remove from oil and drain on paper towels.

5. **Serve:**
– Serve the crispy stuffed rolls warm with your choice of dipping sauce, such as marinara or ranch.
