Potato Salad with Eggs and Bacon
Ingredients
2 pounds clean, fresh red potatoes
6 eggs
1 bacon (we like Kroger pepperoni bacon)

Bring a large pot of salted water to a boil. Add the potatoes and cook until tender but still firm, about 15 minutes.
Place the eggs in a pan and cover them with cold water. Bring the water to a boil and immediately remove from the heat. Cover the eggs and soak in hot water for 10 to 12 minutes. Drain the hot water, cool, let cool and chop finely.
Place the bacon in a large, deep skillet. Cook over medium heat until it reaches a medium consistency. Drain, drain and set aside.
Cut cold potatoes but leave the skin on. Add to a large bowl with eggs, bacon, onion and celery. Add mayonnaise, salt and pepper to taste. We arrive one hour before delivery.
