Oatmeal Cream Pie
Ingredients:

For the Oatmeal Cookies:
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups quick-cooking oats
For the Cream Filling:
- 3/4 cup unsalted butter, softened
- 2 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon heavy cream or milk
Instructions:
- Preheat Oven and Prepare Pans: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Make Cookie Dough:
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- Combine flour, baking soda, cinnamon, and salt; stir into the creamed mixture.
- Mix in oats.
- Drop tablespoonfuls of the mixture onto the prepared baking sheets.
- Bake Cookies:
- Bake for 8-10 minutes or until the edges are golden.
- Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Make Cream Filling:
- Beat butter until smooth.
- Gradually add powdered sugar, beating until fluffy.
- Stir in vanilla and cream until well combined.
- Assemble Cream Pies:
- Spread or pipe a generous amount of filling on the flat side of half of the cookies.
- Top with another cookie, pressing down gently to spread the filling to the edges.
