Oatmeal Cream Pie

 

 

 

 

Ingredients:

For the Oatmeal Cookies:

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups quick-cooking oats

For the Cream Filling:

  • 3/4 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream or milk

Instructions:

  1. Preheat Oven and Prepare Pans: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Make Cookie Dough:
    • In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
    • Beat in eggs one at a time, then stir in vanilla.
    • Combine flour, baking soda, cinnamon, and salt; stir into the creamed mixture.
    • Mix in oats.
    • Drop tablespoonfuls of the mixture onto the prepared baking sheets.
  3. Bake Cookies:
    • Bake for 8-10 minutes or until the edges are golden.
    • Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  4. Make Cream Filling:
    • Beat butter until smooth.
    • Gradually add powdered sugar, beating until fluffy.
    • Stir in vanilla and cream until well combined.
  5. Assemble Cream Pies:
    • Spread or pipe a generous amount of filling on the flat side of half of the cookies.
    • Top with another cookie, pressing down gently to spread the filling to the edges.
