Zucchini Roll-Ups with Creamy Cheese Filling

**Ingredients:**
**For the Zucchini Slices:**
– 2-3 medium zucchini
– Salt (for sweating the zucchini)
**For the Filling:**
– 1 cup ricotta cheese or cream cheese
– 1/2 cup grated Parmesan cheese
– 1/4 cup chopped fresh basil or parsley
– 1/4 cup chopped roasted red peppers (optional)
– Salt and pepper to taste
– 1 garlic clove, minced
**For Coating and Frying (optional):**
– 1 cup all-purpose flour
– 2 large eggs, beaten
– 1 cup breadcrumbs
– Oil for frying

1. **Prepare the Zucchini:**
– Using a mandoline or a sharp knife, slice the zucchini lengthwise into thin slices, about 1/8-inch thick.
– Lay the zucchini slices on a baking sheet and sprinkle with salt. Let them sit for about 10-15 minutes to draw out excess moisture.
– Pat the slices dry with paper towels.
2. **Prepare the Filling:**
– In a mixing bowl, combine the ricotta cheese (or cream cheese), Parmesan cheese, minced garlic, chopped basil or parsley, and roasted red peppers (if using). Season with salt and pepper to taste.
– Mix until everything is well combined.
3. **Assemble the Roll-Ups:**
– Take a zucchini slice and spread a small amount of the filling on one end.
– Roll up the slice tightly and set aside. Repeat with the remaining zucchini slices and filling.
4. **Optional: Coating and Frying:**
– If you want a crispy exterior, coat the roll-ups in flour, then dip in beaten egg, and finally coat with breadcrumbs.
– Heat oil in a frying pan over medium heat. Once hot, add the zucchini roll-ups and fry until golden brown on all sides. Remove and drain on paper towels.
