Creamy Chorizo, Potato and Sauerkraut Soup
INGREDIENTS
- 4 tablespoons butter
- 1 medium onion, finely chopped
- 1/4 cup flour
- 1 1/2 cups chicken broth
- 2 1/2 cups milk
- 1 – 14 ounces Polska Kielbasa, halved and sliced
- 1 1/2 cups cooked potatoes, diced
- 1 cup sauerkraut
- 1/2 teaspoon dried parsley
- 1 cup grated cheddar cheese
- black pepper
INSTRUCTIONS
1 .In a large pot, melt butter over medium heat.
- Add the onions and sauté until soft, about five minutes.
3.Add the flour and stir until completely combined. Cook for a minute, then add chicken broth and milk.

- Turn the heat to medium-high and then cook, stirring frequently, until the broth begins to thicken.
5.Reduce heat to medium and then add kielbasa, diced potatoes, sauerkraut and parsley. Simmer for five minutes and then add the grated cheddar cheese.
- Stir and remove from heat. Serve sprinkled with black pepper.
