 Ingredients:

 For the Meatballs:

  • 1/2 pound ground beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 minced garlic clove
  • 1 large egg
  • Salt and Pepper to taste

 For the soup:

  • 8 cups chicken broth (homemade or store-bought)
  • 1 cup Pasta Acini di Pepe (or other small pasta)
  • 2 cups chopped spinach
  • 1 carrot, diced
  • 1 stick Celery, diced
  • 1/4 cup grated Parmesan cheese (for serving)
  • Salt and pepper to taste

 Instructions:

  1. In a bowl, combine the ground beef, breadcrumbs and grated Parmesan. , chopped garlic, egg, salt and pepper. Form small meatballs.2. In a large pot, bring chicken broth to a boil. Add the diced carrot and celery.
  2. Carefully place the meatballs into the boiling broth and cook until cooked through, about 10 minutes.4. Add the Acini di Pepe pasta and cook according to package instructions.
  3. Add the chopped spinach and cook until wilted.

6.Season the soup with salt and pepper.

  1. Serve hot, garnished with grated Parmesan.
