Coconut Curry Tofu with Vegetables

 

 

 

Ingredients:

  • 1 block of firm tofu, pressed and cubed
  • 2 medium carrots, sliced
  • 1 red bell pepper, sliced
  • 1 can of coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper, to taste
  • Fresh cilantro, chopped
  • Roasted peanuts, for garnish
  • Green onions, sliced, for garnish

Instructions:

  1. Heat oil in a large skillet over medium heat. Add onion, garlic, and ginger, and sauté until onions are translucent.
  2. Add the tofu cubes and fry until all sides are golden brown.
  3. Sprinkle curry powder over the tofu and stir to coat evenly.
  4. Add carrots and bell pepper to the skillet, stirring to combine.
  5. Pour in the coconut milk and bring the mixture to a boil. Reduce heat and let simmer for 10-15 minutes, or until vegetables are tender.
  6. Season with salt and pepper. Garnish with cilantro, green onions, and roasted peanuts.
  7. Serve hot over cooked white rice.
