Ingredients:

  • 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
  • 1 unbaked pie crust (9-inch)
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Prepare Sweet Potatoes:
    • Boil sweet potatoes whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potatoes, and remove the skin.
    • Mash sweet potatoes in a bowl with butter; set aside.
  2. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  3. Mix Pie Filling:
    • In a large bowl, beat together the mashed sweet potatoes, sugar, milk, eggs, nutmeg, cinnamon, vanilla extract, and a pinch of salt. Mix until smooth.
  4. Prepare Pie Crust:
    • Roll out the pie crust and fit it into a 9-inch pie plate. Crimp the edges as desired.
  5. Fill Pie Crust:
    • Pour the sweet potato mixture into the unbaked pie crust.
  6. Bake:
    • Bake in the preheated oven for about 55 to 60 minutes, or until a knife inserted in the center comes out clean. The pie should be slightly jiggly in the center but will set as it cools.
  7. Cool and Serve:
    • Allow the pie to cool on a rack. Serve warm or at room temperature.
  8. Optional Garnishes:
    • Serve with a dollop of whipped cream or a sprinkle of cinnamon on top for extra flavor.
