Sweet Potato Pie Recipe

Ingredients:
- 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
- 1 unbaked pie crust (9-inch)
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1/2 cup milk
- 2 large eggs
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
- Prepare Sweet Potatoes:
- Boil sweet potatoes whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potatoes, and remove the skin.
- Mash sweet potatoes in a bowl with butter; set aside.
- Preheat Oven:
- Preheat your oven to 350°F (175°C).
- Mix Pie Filling:
- In a large bowl, beat together the mashed sweet potatoes, sugar, milk, eggs, nutmeg, cinnamon, vanilla extract, and a pinch of salt. Mix until smooth.
- Prepare Pie Crust:
- Roll out the pie crust and fit it into a 9-inch pie plate. Crimp the edges as desired.
- Fill Pie Crust:
- Pour the sweet potato mixture into the unbaked pie crust.
- Bake:
- Bake in the preheated oven for about 55 to 60 minutes, or until a knife inserted in the center comes out clean. The pie should be slightly jiggly in the center but will set as it cools.
- Cool and Serve:
- Allow the pie to cool on a rack. Serve warm or at room temperature.
- Optional Garnishes:
- Serve with a dollop of whipped cream or a sprinkle of cinnamon on top for extra flavor.
