Strawberry Cheesecake Stuffed Donuts
Ingredients:

For the Donuts:
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
½ teaspoon salt
½ cup milk
2 large eggs
2 tablespoons unsalted butter, melted
Vegetable oil for frying
For the Cheesecake Filling:
8 oz cream cheese, softened
¼ cup powdered sugar
½ teaspoon vanilla extract
½ cup strawberry jam or preserves
For the Topping:
½ cup granulated sugar (for coating)
Fresh strawberry slices (optional, for garnish)
Instructions:
Make the Donut Dough:
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the milk, eggs, and melted butter.
Add the wet ingredients to the dry ingredients and mix until a soft dough forms.
Fry the Donuts:
Heat oil in a deep skillet or pot over medium heat to 350°F (175°C).
Roll out the dough on a floured surface to about ½ inch thickness and cut into round shapes with a donut cutter or a cup.
Fry the donuts in batches for 2-3 minutes per side, or until golden brown. Drain on paper towels.
Prepare the Cheesecake Filling:
In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
Stir in the strawberry jam or preserves.
Assemble the Stuffed Donuts:
Using a piping bag with a round tip, fill the donuts by inserting the tip into the side and piping the strawberry cheesecake filling into the center.
Coat the Donuts:
Roll the stuffed donuts in granulated sugar while they’re still warm.
Serve:
Optionally, garnish with fresh strawberry slices for extra flavor and presentation.
