Lemon Bread

 

Lemon Bread is a delicious baking treat with the bright, refreshing taste of lemon. It is usually made with lemon zest, lemon juice, and sometimes lemon extract for a rich citrus flavor. The bread itself is moist and tender and is often topped with a tangy lemon glaze for added sweetness and tartness. Lemon bread is perfect for breakfast, brunch or dessert and goes wonderfully with a cup of tea or coffee. Here’s a basic recipe to get you started:

 Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted, softened butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons fresh lemon juice
  • zest of one lemon
  • 1 teaspoon vanilla extract

For the lemon glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh Lemon Juice

1.Preheat your oven to 350°F (175°C). Grease and flour a 9 x 5 inch loaf pan.

  1. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Put aside.3. In a large bowl, beat softened butter and granulated sugar with a hand mixer or stand mixer until fluffy.
  2. Stir in the eggs one at a time until everything is well mixed. Add sour cream or Greek yogurt, lemon juice, lemon zest and vanilla extract and stir until smooth.5. Gradually add the dry ingredients to the wet ingredients and stir until well combined. Be careful not to over mix.
  3. Pour the dough into the prepared loaf pan and smooth the top with a spatula.7. Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.
  4. While the bread is baking, prepare the lemon glaze. In a small bowl, stir together the powdered sugar and lemon juice until smooth.9. Once the bread is ready to bake, remove it from the oven and let it cool in the pan for 10 to 15 minutes. Then place on a rack  over a baking sheet.
  5. While the bread is still warm, pour the lemon glaze over it and let it drip down the sides.11. Allow the bread to cool completely before slicing and serving. Enjoy your delicious homemade lemon bread!
