Stovetop Sponge Cake
Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup granulated sugar
- 1/4 cup melted butter (or vegetable oil)
- 1 teaspoon vanilla extract
- 1/4 cup milk
Instructions:
1. Prepare the Batter:
- In a bowl, sift together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the eggs and sugar with an electric mixer on high speed for about 5-7 minutes, until the mixture becomes pale and fluffy.
- Add the melted butter and vanilla extract, and continue to mix.
- Gradually add the dry ingredients into the egg mixture, alternating with the milk, and fold gently to avoid deflating the batter. Make sure everything is well incorporated but be careful not to overmix.
2. Prepare the Cooking Pan:
- Grease and flour a round cake pan (or any deep pan that fits your stove).
- If you don’t have a cake pan that fits a stovetop, you can use any heavy-bottomed pan with a lid.
3. Cook the Cake on the Stovetop:
- Heat a large, heavy-bottomed pan on the stove over low heat.
- Place a small trivet or metal rack at the bottom of the pan to create a space between the direct heat and the cake pan. This prevents the bottom from burning.
- Pour the cake batter into the prepared cake pan and place it inside the large pan on top of the trivet.
- Cover the large pan with a tight-fitting lid. You can also place a clean kitchen towel between the pan and lid to absorb steam.
- Cook on low heat for 25-35 minutes. Avoid opening the lid frequently to retain heat.
- After about 25 minutes, check the cake with a toothpick; if it comes out clean, the cake is done. If not, continue cooking for a few more minutes.
4. Cool and Serve:
- Once the cake is done, remove it from the heat and allow it to cool in the pan for about 10 minutes.
- Run a knife along the edges of the pan to loosen the cake, then invert it onto a cooling rack.
- Let the cake cool completely before slicing.

- You can enhance this recipe by adding a layer of fruit preserves, whipped cream, or frosting.
- For added flavor, try mixing in citrus zest, spices, or other flavorings to the batter.
