Snowball Cookies with Chocolate Chips

Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar (plus extra for coating)
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup toasted nuts (walnuts or pecans), finely chopped
- 1/2 cup mini chocolate chips
Instructions:
- Preheat Oven and Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper or a silicone baking mat.
- Mix the Dough:
- In a large mixing bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
- Stir in the vanilla extract.
- Gradually mix in the flour and salt until the mixture comes together.
- Fold in the chopped nuts and mini chocolate chips.
- Shape the Cookies:
- Roll the dough into 1-inch balls and place them about 1 inch apart on the prepared baking sheet.
- Bake:
- Bake in the preheated oven for 14-18 minutes or until the bottoms are just starting to brown and the cookies are set.
- Cool and Coat:
- Allow the cookies to cool on the pan for about 5 minutes, then while still warm, roll them in additional powdered sugar.
- Let them cool completely on a wire rack.
- Once cool, roll them in powdered sugar again to get a generous coating.
- Serving:
- Serve these delightful cookies as a perfect treat with coffee or tea.
Tips:
- Ensure the nuts are finely chopped to get a good distribution in each cookie.
- The second coating of powdered sugar gives them their characteristic snowy appearance.
