Smoky Chipotle Beef and Bean Chili

 

 


Ingredients:


1 1/2 lbs ground beef
1 tablespoon olive oil
1 large onion, diced
4 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 cup beef broth
2 tablespoons tomato paste
2 chipotle peppers in adobo sauce, minced
1 tablespoon chili powder
1 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon oregano
Salt and pepper to taste
Optional toppings: shredded cheese, sour cream, chopped cilantro, lime wedges

Cook the Beef:

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat and set the beef aside.
Sauté Aromatics:

In the same pot, add the diced onions and garlic. Sauté for 3-4 minutes until softened and fragrant.
Build the Chili Base:

Return the beef to the pot, then add the black beans, kidney beans, diced tomatoes, beef broth, and tomato paste. Stir in the chipotle peppers, chili powder, smoked paprika, cumin, oregano, salt, and pepper.
Simmer:

Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for 30-40 minutes, allowing the flavors to develop. Stir occasionally.
Serve:

Taste and adjust the seasoning as needed. Ladle the chili into bowls and top with your favorite toppings, such as shredded cheese, sour cream, or cilantro. Serve with lime wedges for an extra burst of flavor.
