Slow Cooker Ranch Potatoes with Bacon and Cheese
Ingredients
• 6 slices bacon
• 3 pounds russet potatoes, chopped
• 1 1/2 cups shredded cheddar cheese, divided
• 1 tablespoon ranch dressing mix and salad dressing
• 2 tablespoons chopped chives
Instructions
1. Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil.
2. Spread the bacon in a single layer on the prepared baking sheet.Place in the oven and bake until golden brown and crispy, about 12 to 14 minutes. Allow to cool before crumbling; put aside.
3. Line a slow cooker with aluminum foil, leaving enough overhang to wrap the potatoes, and coat with nonstick spray. Place a layer of potatoes evenly in the slow cooker.Top with cheese, ranch seasoning, and bacon, repeat two more times, reserving 1/2 cup cheese.
4. Cover the potatoes with aluminum foil and cook on low heat for 7-8 hours or on high heat for 3-4 hours. Sprinkle with remaining 1/2 cup cheese. Cover and cook until melted, about 1-2 minutes.5. Serve immediately, garnished with chives.
