Simple Vegetable Soup Recipe

 

 

 

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and diced
  • 2 stalks celery, diced
  • 3 potatoes, peeled and cubed
  • 1/4 cup chopped parsley
  • 4 cups vegetable broth or water
  • Salt and pepper to taste
  • Optional: other vegetables like peas, corn, green beans

  1. Cook the base: In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
  2. Add vegetables: Add the carrots, celery, and potatoes to the pot. Stir to mix everything well.
  3. Simmer the soup: Pour in the vegetable broth or water. Bring the mixture to a boil, then reduce the heat to a simmer. Season with salt and pepper.
  4. Cook until tender: Let the soup cook until the vegetables are tender, about 20-25 minutes. If using, add quick-cooking vegetables like peas or corn in the last 5 minutes.
  5. Finish and serve: Stir in the chopped parsley just before serving for fresh flavor.
