Simple Vegetable Soup Recipe
Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, peeled and diced
- 2 stalks celery, diced
- 3 potatoes, peeled and cubed
- 1/4 cup chopped parsley
- 4 cups vegetable broth or water
- Salt and pepper to taste
- Optional: other vegetables like peas, corn, green beans

- Cook the base: In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
- Add vegetables: Add the carrots, celery, and potatoes to the pot. Stir to mix everything well.
- Simmer the soup: Pour in the vegetable broth or water. Bring the mixture to a boil, then reduce the heat to a simmer. Season with salt and pepper.
- Cook until tender: Let the soup cook until the vegetables are tender, about 20-25 minutes. If using, add quick-cooking vegetables like peas or corn in the last 5 minutes.
- Finish and serve: Stir in the chopped parsley just before serving for fresh flavor.
