Ingredients:

For the Salad:

  • 1 cup orzo pasta
  • 1 lb cooked shrimp, peeled and deveined
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup red bell pepper, diced
  • 2 green onions, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

For the Dressing:

  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 1 garlic clove, minced
  • 1 tsp Dijon mustard
  • 1 tsp honey (optional for sweetness)
  • Salt and pepper to taste

Instructions:

  1. Cook the Orzo:
    • Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. Prepare the Dressing:
    • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, honey (if using), salt, and pepper until emulsified.
  3. Assemble the Salad:
    • In a large mixing bowl, combine the cooked orzo, shrimp, corn, diced red bell pepper, green onions, fresh dill, and parsley.
  4. Add the Dressing:
    • Pour the dressing over the salad and toss to combine, making sure all ingredients are evenly coated. Season with additional salt and pepper if needed.
  5. Chill and Serve:
    • Refrigerate the salad for at least 30 minutes to allow the flavors to meld together. Serve chilled and garnish with extra fresh herbs if desired.
