Beef and Vegetable Stir-Fry
**Ingredients:**

*For the Beef Marinade:*
– 1 lb (450g) beef sirloin or flank steak, thinly sliced
– 2 tablespoons soy sauce
– 1 tablespoon oyster sauce
– 1 tablespoon cornstarch
– 1 tablespoon vegetable oil
*For the Stir-Fry:*
– 2 tablespoons vegetable oil
– 1 small onion, sliced
– 2 cloves garlic, minced
– 1 cup broccoli florets
– 1 large carrot, thinly sliced
– 1 red bell pepper, sliced
– 2 green onions, chopped (for garnish)
*For the Stir-Fry Sauce:*
– 1/4 cup soy sauce
– 2 tablespoons oyster sauce
– 2 tablespoons hoisin sauce
– 1 tablespoon brown sugar or honey
– 1 tablespoon rice vinegar
– 1/2 teaspoon sesame oil
– 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
**Instructions:**
1. **Marinate the Beef:**
– In a bowl, combine the soy sauce, oyster sauce, cornstarch, and vegetable oil. Add the sliced beef and toss to coat evenly. Let it marinate for at least 15 minutes.

2. **Prepare the Stir-Fry Sauce:**
– In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, brown sugar (or honey), rice vinegar, and sesame oil. Set aside.
3. **Cook the Beef:**
– Heat a large skillet or wok over high heat. Add 1 tablespoon of vegetable oil.
– Add the marinated beef in a single layer and cook for 2-3 minutes on each side, until browned and cooked through. Remove the beef from the skillet and set aside.
4. **Stir-Fry the Vegetables:**
– In the same skillet, add the remaining 1 tablespoon of vegetable oil.
– Add the sliced onion and garlic, and stir-fry for about 30 seconds until fragrant.
– Add the broccoli, carrots, and red bell pepper. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
5. **Combine and Serve:**
– Return the cooked beef to the skillet with the vegetables.
– Pour the stir-fry sauce over the beef and vegetables and toss to coat evenly.
– Add the cornstarch slurry to the skillet and cook for an additional 1-2 minutes, until the sauce thickens and coats the beef and vegetables.
– Garnish with chopped green onions and serve immediately over steamed rice or noodles.
