Grilled Chicken and Pineapple Rice

 

 

 

Ingredients:

– 2 cups cooked jasmine or basmati rice
– 1 pound chicken breast, cut into bite-sized pieces
– 1 cup pineapple chunks (fresh or canned)
– 1 red bell pepper, diced
– 3 green onions, chopped
– 2 tablespoons soy sauce
– 1 tablespoon honey
– 1 tablespoon olive oil
– 1 tablespoon sesame oil
– Salt and pepper to taste
– 1 teaspoon garlic powder
– 1 teaspoon ginger powder

1. **Marinate the Chicken:**
– In a bowl, combine soy sauce, honey, olive oil, garlic powder, and ginger powder. Mix well.
– Add the chicken pieces to the marinade and let it sit for at least 30 minutes.

2. **Cook the Chicken:**
– Heat a grill pan or skillet over medium-high heat.
– Add the marinated chicken pieces and cook until golden brown and cooked through, about 5-7 minutes per side. Remove from the pan and set aside.

3. **Cook the Vegetables:**
– In the same pan, add a little more oil if needed, then add the diced red bell pepper and pineapple chunks. Sauté for about 3-4 minutes until they start to caramelize.

4. **Combine Everything:**
– Add the cooked rice to the pan with the vegetables and pineapple. Stir to combine.
– Add the cooked chicken pieces back to the pan.
– Drizzle with sesame oil, and season with salt and pepper to taste. Mix everything well and let it heat through for a few minutes.

5. **Garnish and Serve:**
– Remove from heat and garnish with chopped green onions.
– Serve hot and enjoy!
