Ingredients:

  • For the Omelette:
    • 4 large eggs
    • 2 medium zucchinis, grated
    • 1/4 cup fresh herbs (such as parsley and dill), finely chopped
    • Salt and pepper, to taste
    • 2 tablespoons olive oil or butter for cooking
  • Filling:
    • 4 to 6 slices of ham
    • 1 cup grated cheese (such as Swiss or cheddar)

Instructions:

  1. Prepare the Omelette Batter:
    • In a bowl, beat the eggs.
    • Squeeze the excess moisture out of the grated zucchinis using a clean cloth or paper towels.
    • Add the drained zucchinis to the eggs along with the chopped herbs, salt, and pepper. Mix well.
  2. Cook the Omelette:
    • Heat olive oil or butter in a large non-stick skillet over medium heat.
    • Pour in the egg mixture, spreading it evenly across the pan.
    • Cook for about 3-4 minutes until the edges start to lift from the pan. Flip carefully and cook the other side for another 2-3 minutes.
    • Remove the omelette and let it cool on a plate.
  3. Add the Filling:
    • Place the omelette on a flat surface or cutting board.
    • Lay the ham slices over the omelette, covering it completely.
    • Sprinkle the grated cheese evenly on top of the ham.
  4. Roll the Omelette:
    • Carefully roll up the omelette tightly, starting from one end and moving to the other.
    • If necessary, wrap the roll in cling film and refrigerate for about 30 minutes to help it set.
  5. Slice and Serve:
    • Once set, remove the cling film if used, and cut the roll into 1-inch thick slices.
    • Arrange the slices on a plate and serve.
