Recipe for Zucchini Omelette Rolls
Ingredients:
- For the Omelette:
- 4 large eggs
- 2 medium zucchinis, grated
- 1/4 cup fresh herbs (such as parsley and dill), finely chopped
- Salt and pepper, to taste
- 2 tablespoons olive oil or butter for cooking
- Filling:
- 4 to 6 slices of ham
- 1 cup grated cheese (such as Swiss or cheddar)
Instructions:
- Prepare the Omelette Batter:
- In a bowl, beat the eggs.
- Squeeze the excess moisture out of the grated zucchinis using a clean cloth or paper towels.
- Add the drained zucchinis to the eggs along with the chopped herbs, salt, and pepper. Mix well.
- Cook the Omelette:
- Heat olive oil or butter in a large non-stick skillet over medium heat.
- Pour in the egg mixture, spreading it evenly across the pan.
- Cook for about 3-4 minutes until the edges start to lift from the pan. Flip carefully and cook the other side for another 2-3 minutes.
- Remove the omelette and let it cool on a plate.
- Add the Filling:
- Place the omelette on a flat surface or cutting board.
- Lay the ham slices over the omelette, covering it completely.
- Sprinkle the grated cheese evenly on top of the ham.
- Roll the Omelette:
- Carefully roll up the omelette tightly, starting from one end and moving to the other.
- If necessary, wrap the roll in cling film and refrigerate for about 30 minutes to help it set.
- Slice and Serve:
- Once set, remove the cling film if used, and cut the roll into 1-inch thick slices.
- Arrange the slices on a plate and serve.
