Recipe for Mini Pecan Tartlets
Ingredients:
- For the Pastry:
- 1 1/4 cups all-purpose flour
- 1/4 tsp salt
- 1/3 cup unsalted butter, chilled and diced
- 4-5 tbsp cold water
- For the Filling:
- 1/2 cup brown sugar, packed
- 1/4 cup corn syrup (light or dark)
- 1 tbsp melted butter
- 1/2 tsp vanilla extract
- 1 large egg, beaten
- 1/2 cup chopped pecans
Instructions:
- Make the Pastry:
- In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs.
- Gradually add water, stirring until mixture forms a ball. Wrap in plastic and refrigerate for at least 30 minutes.
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Prepare the Tart Shells:
- On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Cut out rounds using a cookie cutter or cup that is slightly larger than the muffin cups.
- Press the rounds into the muffin cups, using a smaller cup or a tamper to form a well in the center, as shown in your image.
- Make the Filling:
- In a bowl, whisk together brown sugar, corn syrup, melted butter, vanilla, and egg until smooth.
- Stir in the chopped pecans.
- Assemble the Tartlets:
- Spoon the filling into the pastry-lined muffin cups, filling each about 2/3 full.
- Bake:
- Bake in the preheated oven for about 20 minutes, or until the filling is set and the pastry is golden brown.
- Cool and Serve:
- Allow to cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
- Serve as is or with a dollop of whipped cream or a scoop of vanilla ice cream.
