Ingredients:

  • For the Pastry:
    • 1 1/4 cups all-purpose flour
    • 1/4 tsp salt
    • 1/3 cup unsalted butter, chilled and diced
    • 4-5 tbsp cold water
  • For the Filling:
    • 1/2 cup brown sugar, packed
    • 1/4 cup corn syrup (light or dark)
    • 1 tbsp melted butter
    • 1/2 tsp vanilla extract
    • 1 large egg, beaten
    • 1/2 cup chopped pecans

Instructions:

  1. Make the Pastry:
    • In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs.
    • Gradually add water, stirring until mixture forms a ball. Wrap in plastic and refrigerate for at least 30 minutes.
  2. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  3. Prepare the Tart Shells:
    • On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Cut out rounds using a cookie cutter or cup that is slightly larger than the muffin cups.
    • Press the rounds into the muffin cups, using a smaller cup or a tamper to form a well in the center, as shown in your image.
  4. Make the Filling:
    • In a bowl, whisk together brown sugar, corn syrup, melted butter, vanilla, and egg until smooth.
    • Stir in the chopped pecans.
  5. Assemble the Tartlets:
    • Spoon the filling into the pastry-lined muffin cups, filling each about 2/3 full.
  6. Bake:
    • Bake in the preheated oven for about 20 minutes, or until the filling is set and the pastry is golden brown.
  7. Cool and Serve:
    • Allow to cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
    • Serve as is or with a dollop of whipped cream or a scoop of vanilla ice cream.
