Ingredients:

  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/3 cup white sugar
    • 6 tablespoons butter, melted
  • For the Cheesecake Layer:
    • 1 (8 ounce) package cream cheese, softened
    • 1/4 cup white sugar
    • 1 teaspoon vanilla extract
    • 1 large egg
  • For the Pecan Layer:
    • 1 cup light brown sugar, packed
    • 2/3 cup dark corn syrup
    • 1/3 cup butter, melted
    • 3 large eggs
    • 1/2 teaspoon salt
    • 1/2 teaspoon vanilla extract
    • 1 1/2 cups pecans, roughly chopped
  • For the Topping:
    • 1/2 cup heavy cream
    • 2 tablespoons confectioners’ sugar
    • Caramel sauce for drizzling
    • Extra pecans for garnish

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • Mix graham cracker crumbs, sugar, and melted butter until well combined.
    • Press the mixture into the bottom and up the sides of a 9-inch pie plate.
    • Bake in preheated oven for 7 minutes. Remove and cool.
  2. Make the Cheesecake Layer:
    • Beat the cream cheese with sugar, vanilla, and egg until smooth and creamy.
    • Spread over the cooled crust.
    • Return to the oven and bake for 20 minutes.
    • Remove and let cool slightly.
  3. Prepare the Pecan Layer:
    • In a bowl, whisk together brown sugar, corn syrup, melted butter, eggs, salt, and vanilla until smooth.
    • Stir in the chopped pecans.
    • Pour over the baked cheesecake layer.
  4. Bake the Pie:
    • Return the pie to the oven and bake for about 35-40 minutes or until the filling is set.
    • Let the pie cool completely before topping.
  5. Make the Whipped Cream:
    • Whip the heavy cream with confectioners’ sugar until soft peaks form.
  6. Serve:
    • Pipe or dollop whipped cream around the edges of the cooled pie.
    • Drizzle with caramel sauce and garnish with extra pecans before serving.

This pie combines the creamy texture of cheesecake with the sweet crunch of a pecan pie, topped off with the luxury of whipped cream and caramel. It’s a decadent dessert perfect for special occasions or satisfying a sweet craving!
