Poppy Seed Brioche Rolls

 

 

Ingredients:

– **1/2 cup warm milk (110°F/45°C)**
– **2 teaspoons active dry yeast**
– **1/4 cup granulated sugar**
– **4 cups all-purpose flour**
– **1 teaspoon salt**
– **5 large eggs, room temperature**
– **1 cup unsalted butter, softened**
– **2 tablespoons poppy seeds**
– **Egg wash (1 egg beaten with 1 tablespoon water)**
– **Butter for greasing the bowls**

Instructions:

 

1. **Activate the Yeast**:
– In a small bowl, combine warm milk, yeast, and 1 tablespoon of sugar. Stir and let sit for about 5 minutes until frothy.

2. **Make the Dough**:
– In the bowl of a stand mixer fitted with the dough hook attachment, combine flour, remaining sugar, and salt. Mix briefly to combine.
– Add the yeast mixture and 4 eggs to the flour mixture. Mix on low speed until the dough starts to come together, about 2-3 minutes.
– Increase the speed to medium and add the softened butter, one tablespoon at a time, ensuring each piece is fully incorporated before adding the next. Continue to knead for about 10 minutes, or until the dough is smooth and elastic.
– Add the poppy seeds and knead for an additional 2 minutes to incorporate.

3. **First Rise**:
– Grease a large bowl with butter and place the dough in the bowl. Cover with plastic wrap and let rise in a warm place for about 1-2 hours, or until doubled in size.

4. **Shape the Rolls**:
– Punch down the dough and divide it into 8 equal portions. Shape each portion into a ball and place in greased ramekins or muffin tins.
– Cover and let rise for another 45 minutes to 1 hour, or until doubled in size.

5. **Preheat the Oven**:
– Preheat your oven to 375°F (190°C).

6. **Apply Egg Wash and Bake**:
– Brush the tops of the rolls with egg wash. Bake for 20-25 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.

7. **Cool and Serve**:
– Let the rolls cool in the ramekins or muffin tins for about 5 minutes before transferring to a wire rack to cool completely.
