Ingredients:

  • 1 lb (450 g) ground chicken
  • 1/2 cup finely grated carrots
  • 1/4 cup finely chopped bell peppers (any color)
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped parsley or cilantro
  • 1/4 cup breadcrumbs (or panko)
  • 1 egg
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika (optional for added flavor)
  • 1 teaspoon dried oregano or thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions:

1. Prepare the Patty Mixture:

  • In a large bowl, combine the ground chicken, grated carrots, chopped bell peppers, chopped onion, and parsley or cilantro.
  • Add the breadcrumbs, egg, garlic powder, paprika (if using), oregano, salt, and pepper.
  • Mix all the ingredients thoroughly until well combined. The mixture should be moist but not too wet. If it feels too wet, add a little more breadcrumbs.

2. Shape the Patties:

  • Using your hands, shape the mixture into patties. You can make them as big or small as you like, but aim for uniform sizes so they cook evenly.

3. Cook the Patties:

  • Heat the olive oil in a large skillet over medium heat.
  • Add the patties to the skillet, making sure not to overcrowd the pan. You may need to cook them in batches.
  • Cook for about 4-5 minutes on each side, or until they are golden brown and cooked through (the internal temperature should reach 165°F or 74°C).

4. Serve:

  • Once cooked, remove the patties from the skillet and let them rest for a couple of minutes.
  • Serve warm with your favorite dipping sauce, on top of a salad, or as a burger patty in a bun.

Optional Add-ins:

  • Cheese: Add a little grated cheese like cheddar or mozzarella into the mixture for extra flavor and creaminess.
  • Spice: If you like it spicy, add some chili flakes or chopped jalapeños into the mixture.
  • Sauces: Serve with garlic aioli, tzatziki, or a yogurt-based dip for extra flavor.
