Pineapple Glazed Pork Chops with Rosemary
Ingredients:

- 4 pork chops, about 1-inch thick
- Salt and freshly ground black pepper
- 2 tbsp olive oil
- 1 cup pineapple, cut into chunks
- 2 tbsp honey
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- Fresh rosemary sprigs
- 1/2 tsp red pepper flakes (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Season the Pork Chops: Season both sides of the pork chops generously with salt and pepper.
- Sear the Pork Chops: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the pork chops and sear until golden brown on both sides, about 3-4 minutes per side. Remove the pork chops and set aside.
- Prepare the Glaze: In the same skillet, reduce the heat to medium. Add the pineapple chunks and cook until they start to caramelize, about 5 minutes. Stir in the honey, soy sauce, minced garlic, and red pepper flakes. Cook for another 2 minutes until the sauce is bubbly and slightly reduced.
- Bake: Return the pork chops to the skillet. Spoon some of the pineapple and glaze over the chops. Tuck a few rosemary sprigs around the meat. Transfer the skillet to the oven and bake for 10-15 minutes, or until the pork chops are cooked through (internal temperature should reach 145°F).
- Serve: Serve the pork chops hot, garnished with additional fresh rosemary. The sweet and tangy flavor of the pineapple complements the rich, savory pork beautifully.
